This easy warm carrot salad has evolved from a very simple warm grated carrot recipe that David used to make many many years ago!
I've since started adding grated courgette, if I've got one in the fridge, and defrosted frozen sweetcorn and petit pois that I've always got in the freezer. The peas and sweetcorn add lovely pops of sweetness to the salad.
It's very quick and easy to make, and goes very well with any grilled, pan fried or barbecued meat and fish.
Tips
- If you don't have, or don't like courgette, just add some extra carrot instead.
- This easy warm carrot salad recipe can easily be adapted if you're cooking for less or more people.

- 50g frozen peas or petit pois, defrosted in hot tap water and drained

- 10g butter
Instructions
- Put the carrot, courgette, sweetcorn and peas into a microwavable bowl, season with salt and freshly ground black pepper. Stir to mix well and then dot with the butter.
- Microwave for 3 minutes on high, until hot (note: our microwave is 800W, so you may need to adjust timing depending on the wattage of your microwave). Stir to mix again and serve either straight from the microwave bowl, or transfer to a serving bowl.
