This easy baby leaf salad is a simple go-to side that works with just about anything. Fresh, crisp leaves, peppery radishes, crunchy cucumber and ripe vine tomatoes make it the perfect quick addition to lunches, dinners or BBQ spreads.  

Everyone needs an easy leaf salad up their sleeve to enjoy with BBQ meats, chicken dishes, pasta meals, sandwiches and wraps…in fact the list of what a salad goes with is endless!

  • Optional variations: 
    • Nuts and seeds - garnish the salad with your favourite nuts and seeds. 
    • Cheese - sprinkle the salad with crumbled feta or grated parmesan.

How to make this Easy Baby Leaf Salad

Ingredients

  • 90g bag baby leaf salad 
  • 6 radishes (approx. 85g), ends trimmed and thickly sliced 
  • quarter of a cucumber (approx. 100g), quartered lengthways and cut into chunks 
  • 4 small vine tomatoes (approx. 160g), cut into wedges 

To serve (optional - see step 2):

  • salt and freshly ground black pepper (optional - see step 2) 
  • extra virgin olive oil 
  • balsamic vinegar 

Instructions

  1. Toss all the ingredients gently in a mixing bowl then transfer to a serving bowl. 
  2. If you're making a dressing for the salad, there's no need to season it.  If not, season with salt and freshly ground black pepper and dress it with some extra virgin olive oil and balsamic vinegar.
