Equipment

Ingredients

  • 1 Melton Mowbray pork pie (295g) cut into quarters
  • 2 large slices ham (approx. 100g) rolled up
  • 60 g (2.1 oz) soft goat’s cheese
  • 60 g (2.1 oz) blue cheese (we like stilton or any creamy blue cheese)
  • 60 g (2.1 oz) extra mature cheddar
  • 4 thick slices crusty bread (approx. 200g) or 1 baguette, sliced
  • 60 g (2.1 oz) homemade chutney or Branston pickle
  • 8 cherry tomatoes
  • 12 silverskin pickled onions drained
  • 4 gherkins
  • 12 slices cucumber (approx. 80g)
  • 1 apple (we like Pink Lady) thinly sliced or cut into wedges (do this last to prevent browning)
  • butter to serve
  • salt and freshly ground black pepper to serve

Instructions

  • Arrange the pork pie, ham, cheeses and bread on a large platter or board.
  • Put the chutney or pickle, cherry tomatoes, pickled onions, gherkins and cucumber slices in small dishes and place them on or around the platter or board.
  • Add the slices or wedges of apple to the platter or board, along with a small dish of butter and salt and pepper grinders.

Notes

  • Optional variations:
    • Vegetarian ploughman’s – leave out the pork pie and ham and add hard boiled eggs.
    • Picnic ploughman’s – pack up the ingredients in separate sandwich bags or airtight containers to transport and serve at your picnic location.
  • This ploughman’s platter recipe is easily adapted if you’re cooking for less or more people.
