The original recipe appeared in the June 2022 easyFood magazine in a 2 page spread of 6 DIY dressings. All of the dressings really appealed...I've made 3 out of the 6...this is the third.
It's a delicious dressing...use it to dress pasta salad, a mixed green salad, or any salad that would go well with a vinaigrette-style dressing. You can also use it as a marinade for chicken, beef, pork or seafood, or drizzle it over grilled vegetables for extra flavour.
Tips
- Optional add-ins - try adding Dijon mustard for creaminess and emulsification or chilli flakes for heat. A pinch of sugar or honey will balance acidity.

- 2 tbsp white wine vinegar
- 1 tbsp lemon juice
- 1 shallot, finely chopped
- 2 cloves garlic, crushed
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp Italian seasoning
- salt and freshly ground black pepper, to taste
Instructions
- Add all of the ingredients to a mixing bowl and whisk until combined, or pulse in a food processor.
- Use immediately or store in the fridge in a jar or airtight container for up to 2 weeks. Shake or stir well before using to prevent separation.
