Halloumi Burgers

These easy halloumi burgers are crisp on the outside, gooey inside, and packed with flavour. Serve in ciabatta buns with delicious toppings for a perfect vegetarian meal.

Ingredients

  • 2 blocks of halloumi cheese
  • 2 tbsp olive oil
  • juice of 1 lemon
  • 0.5 tsp salt
  • 1 tsp dried oregano

For the yogurt dressing:

  • 200 g (7.1 oz) Greek yogurt
  • 1 tsp dried mint
  • 0.5 tsp dried oregano
  • a pinch of sugar
  • salt and freshly ground black pepper

To serve:

  • 4 ciabatta buns split
  • 4 large lettuce or salad leaves
  • 4 tbsp chilli jam – shop bought or homemade
  • 4 slices of red onion
  • 4 rings of pepper (any colour)
  • 8 slices of cucumber cut on the diagonal
  • mint leaves (optional)

Instructions

  • First make the yogurt dressing. Strain the yogurt through a muslin-lined sieve for 30 minutes to drain off any excess liquid, then mix with the herbs, sugar and plenty of seasoning. Set aside.
  • Cut each block of cheese into 4 slices. Whisk the olive oil and lemon juice with the salt and oregano. Pour this over the cheese slices and turn so they are completely coated. Heat a griddle pan or frying pan on a high heat for around 3 minutes, then add the slices of cheese. Griddle for 2 to 3 minutes on each side until charred or well browned. If you prefer your onions cooked, rather than raw, add them at the same time as the cheese.
  • To assemble, lightly toast the ciabatta buns. Add a dollop of the yogurt dressing to the bottom half of each ciabatta bun, then top with a lettuce leaf or some salad leaves. Now add a slice of halloumi, a tbsp of chilli jam and a slice of red onion. Add the second slice of halloumi, top with a ring of pepper, 2 cucumber slices and some mint leaves, if using, then add a little more yogurt dressing. Sandwich with the top halves of the ciabatta buns. Serve immediately.

Notes

  • Brioche or sourdough rolls will work well too.
  • Try different sauces like garlic mayo, harissa yogurt, sweet chilli sauce or chimichurri.
  • Optional variations:
    • Toppings - try roasted red peppers, rocket, caramelised onions, slices of avocado or some coleslaw.
    • Different flavours:
      • Spicy - add chilli flakes.
      • Middle Eastern - serve with houmous, pickled red cabbage and pomegranate seeds.
      • Tex-Mex - top with avocado, salsa and jalapeños.
  • This halloumi burgers recipe is easily adapted if you’re cooking for less or more people.
