- 1 tsp garlic salt
- 2 tbsp smoked paprika
- a pinch of sugar
- salt and freshly ground black pepper
- 500 g (1.1 lb) salmon fillets
For the chipotle lime yogurt:
- 200 ml (7.3 oz) fat-free yogurt
- 1 tbsp chipotle paste or chilli sauce
- 1 lime juiced
- salt and freshly ground black pepper
To serve:
- 8 mini soft flour tortillas warmed
- quarter of a small iceberg lettuce finely shredded
- a small bunch of coriander sprigs
- a few pickled jalapeno chillis
- lime wedges
- hot chilli sauce (optional)
Rub the garlic salt, paprika, sugar and some seasoning into the flesh of the salmon fillet. Heat the grill to high.
Mix the yogurt, chipotle paste or chilli sauce and lime juice together in a small bowl with some seasoning, and set aside. Place the salmon on a baking tray lined with tin foil and grill, skin side down, for 7 to 8 minutes until cooked through. Remove from the grill and carefully peel off and discard the skin.
Flake the salmon into large chunks and serve with the warmed tortillas, chipotle lime yogurt, shredded lettuce, coriander sprigs, chillis and lime wedges. Add a shake of hot chilli sauce, if you like.
- Optional variations:
- Add mango chunks or pineapple salsa for a tropical twist.
- Make it into a bowl by serving the salmon, toppings and sauce over rice or quinoa.
- Use gluten-free corn tortillas to make it gluten-free.
