Cucumber, Red Onion and Feta Salad

A lovely fresh salad that doesn't just need to be eaten with Greek food. You can make it as hot as you like, or not, with the chilli flakes.

Ingredients

  • quarter of a cucumber (approx. 150g) quartered lengthways, deseeded then diced
  • 1 small red onion (approx. 60g) finely chopped
  • 50 g (1.8 oz) feta cut into small cubes
  • 0.25 tsp chilli flakes (or more, to taste)
  • 1 tbsp extra virgin olive oil (Greek, if you have it)
  • salt and freshly ground black pepper to taste

Instructions

  • Mix all the ingredients together in a small serving dish and set aside until ready to eat.

Notes

  • This cucumber, red onion and feta salad recipe is easily adapted if you’re making it for less or more people.
