Chicken Cosmopolitan

Juicy tender chicken, sweet cranberry and vodka or gin soaked orange and red onion slices...perfectly balanced!

Ingredients

  • 2 red onions sliced
  • 1 large orange sliced
  • 4 rosemary sprigs plus extra to serve
  • a few thyme sprigs
  • 6 skin on bone in chicken thighs
  • salt and freshly ground black pepper
  • 4 tbsp cranberry sauce or cranberry and rosemary chutney plus a handful fresh cranberries if you have some
  • 2 tbsp balsamic vinegar
  • 100 ml (½ cup) vodka or use gin

Instructions

  • Heat the oven to 180C fan/gas 6. Arrange the onions and orange slices in a deep sided casserole or roasting tin, scatter over the herbs, then nestle the chicken thighs on top. Season, spoon over the cranberry sauce/berries and balsamic, then cover and roast for 25 minutes.
  • Add the vodka, then roast for 25 minutes more until the chicken is cooked through. Sprinkle with extra rosemary to serve.  We enjoyed ours with some sautéed potatoes on the side.

Notes

  • Depending on how hungry you are, and how large your chicken thighs are, this recipe will feed 3 to 6 people.
  • This recipe for chicken cosmopolitan is easily adapted if you’re cooking for less or more people.
