- 10 chicken wings wing tips removed and jointed to give 20 pieces in total
- 125 ml (½ cup) hot sauce (we like Frank's RedHot Wings Buffalo Sauce)
- 50 g (1.8 oz) butter melted
- 1 tbsp Worcestershire sauce
- 1 tbsp tabasco sauce
- 1 tsp cayenne pepper
- 125 ml (½ cup) sour cream
- 60 ml (2 oz) mayonnaise
- 75 g (2.6 oz) blue cheese crumbled
- 1.5 tsp white wine vinegar
- juice of half a lemon
- seasoning to taste
Marinate the chicken wings in a bowl in a mixture of the hot sauce, butter, Worcestershire sauce, tabasco sauce and cayenne pepper - preferably overnight, but a couple of hours is fine.
Transfer the wings to a roasting dish or baking tray and grill for 12 to 15 minutes under a high heat until they're cooked through and golden brown on both sides - turn and baste with the sauce half way through.
Make the blue cheese dressing by combining the sour cream, mayonnaise, blue cheese, white wine vinegar and lemon juice. Season to taste.
Transfer the wings to a platter or bowl and serve with the blue cheese dressing.
- Dairy-free option - replace the butter with a plant-based alternative.
- Mild vs spicy - adjust the amount of hot sauce or add some honey for a milder version.
- Alternative wing sauces - try BBQ, honey mustard or teriyaki for variety.
- Seasonings - try adding garlic powder or smoked paprika instead of cayenne.
- This buffalo chicken wings recipe is easily halved or doubled if you're cooking for less or more people.
