Buffalo Chicken Wings

These crispy buffalo chicken wings are coated in a spicy, tangy sauce and perfect for game day, parties, or a delicious snack. Easy to make and full of flavour!

Ingredients

  • 10 chicken wings wing tips removed and jointed to give 20 pieces in total
  • 125 ml (½ cup) hot sauce (we like Frank's RedHot Wings Buffalo Sauce)
  • 50 g (1.8 oz) butter melted
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tabasco sauce
  • 1 tsp cayenne pepper
  • 125 ml (½ cup) sour cream
  • 60 ml (2 oz) mayonnaise
  • 75 g (2.6 oz) blue cheese crumbled
  • 1.5 tsp white wine vinegar
  • juice of half a lemon
  • seasoning to taste

Instructions

  • Marinate the chicken wings in a bowl in a mixture of the hot sauce, butter, Worcestershire sauce, tabasco sauce and cayenne pepper - preferably overnight, but a couple of hours is fine.
  • Transfer the wings to a roasting dish or baking tray and grill for 12 to 15 minutes under a high heat until they're cooked through and golden brown on both sides - turn and baste with the sauce half way through.
  • Make the blue cheese dressing by combining the sour cream, mayonnaise, blue cheese, white wine vinegar and lemon juice. Season to taste.
  • Transfer the wings to a platter or bowl and serve with the blue cheese dressing.

Notes

  • Dairy-free option - replace the butter with a plant-based alternative.
  • Mild vs spicy - adjust the amount of hot sauce or add some honey for a milder version.
  • Alternative wing sauces - try BBQ, honey mustard or teriyaki for variety.
  • Seasonings - try adding garlic powder or smoked paprika instead of cayenne.
  • This buffalo chicken wings recipe is easily halved or doubled if you're cooking for less or more people.
