Ingredients

  • 500 g (1.1 lb) cod fillets cut into large pieces (approx. 8 to 10cm)
  • salt and freshly ground pepper
  • 3 or 4 lemon wedges or slices
  • 60 g (2.1 oz) butter melted
  • 1 tbsp olive oil
  • 3 cloves garlic crushed
  • 1 tbsp Cajun seasoning

To garnish:

  • a small handful of chopped parsley

Instructions

  • Preheat the oven to 200C. In roasting tin or baking dish (approx. 32cm x 21cm) add the cod and season with salt and freshly ground pepper. Scatter around the lemon wedges or slices.
  • To make the sauce – in a small bowl whisk together the melted butter, olive oil, garlic and Cajun seasoning. Spread evenly over the fish.
  • Bake for about 15 minutes or until the fish is opaque and flakes easily. Enjoy served with boiled potatoes or rice and vegetables of your choice.

Notes

  • Freezable – let the baked cod cool completely before transferring it to an airtight container or zip lock bag.   It can be frozen for up to 1 month.   Defrost throughly and then reheat in the oven at 180C for 12 to 15 minutes.
  • This baked cajun garlic butter cod recipe is easily adapted if you’re cooking for less or more people.
