David found this grilled corn with chilli mayonnaise, coriander and feta recipe on the BBC Good Food website.
We normally roll barbecued corn in butter, but fancied trying something different for a change...and weren't disappointed. There's a lovely heat from the chilli flakes that is balanced out with the fresh coriander, salty feta and zesty lime juice - yum!

How to make this Grilled Corn with Chilli Mayonnaise, Coriander and Feta
Ingredients
- 4 corn on the cobs
- 50g mayonnaise
- 2 tsp chilli flakes
- salt and freshly ground black pepper
- 60g feta, crumbled
- 2 tbsp fresh coriander, finely chopped
- 1 lime, cut into quarters
Instructions
- Cook the corn on the cobs in a large pan of boiling water for 5 minutes. Remove the pan from the heat and leave the corn in the water until you're ready to BBQ.
- Mix the mayonnaise and chilli flakes along with some seasoning in a small bowl.
- Heat the BBQ to high. Just before cooking, remove the cobs from the water, pat dry and brush all over with the mayonnaise and chilli flakes mixture. Cook for 5 minutes on the BBQ, turning regularly until grill marks appear. Sprinkle the cobs with the coriander and crumbled feta, serve immediately with lime wedges to squeeze over when eating.
