Having always bought fajita seasoning from the supermarket, I decided give the recipe made in our Thermomix a try. Don't worry if you don't have one, you can easily make it using a grinder or pestle and mortar - i've given instructions at the bottom of the page.
This homemade fajita seasoning has a lovely warmth and spice, and gives a delicious flavour to your fajitas. It can be used in other recipes - see the Cookidoo Tip below. The ingredient list is pretty much spices that you'll have in your cupboard any way, so make a batch of seasoning to use in more than just fajitas!

Tips
- I use ancho chilli flakes instead of whole dried chillies – Tesco and Sainsbury’s sell jars in the spice section.
- This recipe for fajita seasoning is easily adapted if you need to make less or more.
Cookidoo Tip
- This fajita seasoning mix works well in any Tex-Mex recipe (eg: chicken fajita soup, black beans, Texas coleslaw, Tex-Mex turkey soup and fajitas).

How to make this Fajita Seasoning (Thermomix)

If you don't have the Cookidoo app for your Thermomix, follow the recipe below:
Ingredients
- 28g dried guajillo chillies or dried ancho chillies (see Tips)
- 1.5 tsp dried oregano
- 3 tbsp cumin seeds
- 1.5 tsp garlic powder
- 1.75 tsp salt
- 0.25 tsp cayenne pepper
- 0.5 tsp freshly ground black pepper
Instructions
- Place the dried chillies, oregano, cumin seeds, garlic powder, salt, cayenne and black pepper into the mixing bowl and grind for 30 seconds/speed 10. Transfer the seasoning to an airtight jar and use as needed.
Non-Thermomix Instructions
I'd suggest the recipe can easily be adapted using a grinder or pestle and mortar.
My suggestions are as follows:
- If using a grinder - place all of the ingredients into the grinder and grind for 30 seconds on a high speed. Transfer the seasoning to an airtight jar and use as needed.
- If using a pestle and mortar - place the dried chillies and cumin seeds into the mortar and grind with the pestle until you can get them as fine as possible. Place the remaining ingredients plus the ground chillies and cumin seeds into an airtight jar and use the seasoning as needed.
