Frequently Asked Questions

What flour is best for pizza dough?

00 flour is best for tender, delicate, and thin-crust Neapolitan-style pizzas baked at high temperatures, offering a smooth, elastic dough that is easy to stretch. Strong bread flour is ideal for chewier, crispy and thicker crust pizzas baked in home ovens, as its higher protein content provides a stronger structure.

How long should pizza dough rise?

Pizza dough typically needs 1 to 2 hours to double in size.

Can you freeze pizza dough?

Yes - pizza dough freezes very well for up to 3 months.

Can you make pizza dough without a mixer?

Yes - pizza dough can easily be kneaded by hand.

Why is my pizza dough tough?

Overworking the dough or using too much flour can make the crust tough.
