Roast smashed baby potatoes are the ultimate side dish - crisp and golden on the outside, fluffy and tender in the middle. Made with simple ingredients and endless flavour possibilities, they're perfect alongside a Sunday roast, grilled meats, or even served as a snack with dips. Once you try them, you'll never go back to plain roast potatoes. 

A versatile potato side dish, they're perfect with roast chicken, beef, lamb, or pork, or how about serving them alongside grilled meats or BBQ dishes. They're also delicious served as a snack with dips like garlic mayo, aioli, sour cream, or chimichurri .

Tips

  • Optional flavour variations: 
    • Add crushed garlic before roasting. 
    • Sprinkle the smashed potatoes with chopped fresh rosemary or thyme before roasting. 
    • Sprinkle the smashed potatoes with some smoked paprika or chilli flakes before roasting. 
    • Near the end of the roasting time, sprinkle the potatoes with some grated parmesan or pecorino cheese. 
    • Loaded smashed potatoes - top the finished potatoes with a blob of sour cream, chopped crispy bacon and chopped chives. 
  • Air fryer - roast the smashed potatoes at 200C for 15 to 18 minutes.
  • This roast smashed baby potatoes recipe is easily adapted if you're cooking for less or more people.    

Frequently Asked Questions

Why aren't my smashed potatoes crispy?  

Too much moisture. Make sure the potatoes are well drained and steam-dried before smashing.  

Can I make them ahead of time?  

Yes - boil and smash earlier in the day, refrigerate, then roast when ready.

What potatoes are best?  

Baby potatoes or small Maris Piper potatoes work best.  

Can I freeze smashed potatoes?  

They're best fresh, but you can freeze after boiling and smashing. Roast from frozen, adding extra time.  

How do I reheat leftovers?  

Reheat in a hot oven or air fryer to restore crispiness.

How to make these Roast Smashed Potatoes

Ingredients

  • 12 whole baby potatoes (approx. 600g) 
  • cooking salt 
  • 6 tbsp olive oil 
  • salt and freshly ground black pepper 

Instructions (see Tips to roast in the air fryer)

  1. Preheat the oven to 220C/200C fan/gas 7. 
  2. Cook the potatoes in a pan of boiling salted water for 15 to 17 minutes, or until fork tender. Drain and leave to steam dry for 2 to 3 minutes. 
  3. Drizzle a large baking pan with 3 tbsp of the olive oil. Place the potatoes on the tray, leaving plenty of room between each potato. 
  4. With a potato masher, gently press down each potato until it slightly mashes, then push any excess potato out of the masher back on top of the potatoes. Drizzle the tops of each crushed potato with the other 3 tbsp of olive oil. 
  5. Season the potatoes with salt and freshly ground black pepper and bake for 20 to 25 minutes, until golden brown and sizzling.

These roast smashed baby potatoes are crispy, golden, and fluffy inside. An easy, crowd-pleasing side dish perfect for roasts, barbecues, or midweek dinners.

Equipment

  • Saucepan
  • Colander
  • Large baking tray
  • Baking tray

Ingredients

  • 12 whole baby potatoes (approx. 600g)
