This easy sautéed asparagus recipe features tender, crisp asparagus cooked with butter and olive oil. A quick and healthy side dish ready in minutes!

It's delicious served with grilled or pan fried meat, chicken, fish, or pasta dishes.  Include in frittata or grain bowl recipes, or as a topping for pizza.

It’s a very versatile side dish that pairs perfectly with nearly any main course.  We enjoy it when cooking a special meal.

Tips

  • If serving this asparagus with pan fried meat, chicken or fish, I’d recommend cooking it in the same frying pan while the meat, chicken or fish are resting, to incorporate the flavours!
  • Oil options – use avocado oil or a plant-based alternative for different flavours.
  • Additional ingredients – include cherry tomatoes, sliced mushrooms or shallots for a more robust dish.
  • Additional flavours – include a squeeze of lemon juice or a sprinkle of parmesan for added depth.
  • Herbs and spices – try adding fresh thyme, parsley, or a pinch of chilli flakes for extra flavour.
  • Toppings – garnish with toasted almonds, pine nuts or crumbled feta for added texture and richness.

Look for firm, bright green stalks with tightly closed tips. Avoid asparagus that looks wilted or dry at the ends. 

Should I blanch the asparagus before sautéing? 

It’s not necessary, but blanching can help retain vibrant colour and ensure even cooking if the stalks are particularly thick. 

How do I prevent asparagus from becoming soggy? 

Cook over a medium high heat and avoid overcrowding the pan. This allows the asparagus to sauté rather than steam. 

Can I make this dish ahead of time? 

Sautéed asparagus is best enjoyed fresh, but you can cook it slightly underdone and reheat gently in a pan just before serving. 

How do I store leftover asparagus? 

Keep cooled asparagus in an airtight container in the fridge for up to 3 days. Reheat briefly in a skillet or enjoy cold in salads. 

Can I freeze sautéed asparagus? 

It’s not ideal, as the texture may become mushy upon thawing. If you need to freeze asparagus, blanch it first and freeze it raw.

HOW TO MAKE THIS EASY SAUTÉED ASPARAGUS

Ingredients

  • 1 tbsp olive oil 
  • 1 tbsp butter
  • 200g asparagus tips, woody ends snapped off 
  • salt and freshly ground black pepper

Instructions (see Tips)

  1. Heat the olive oil and butter in a large frying pan over a medium to high heat. Add the trimmed asparagus tips in a single layer and season with salt and freshly ground black pepper.  Sauté for 3 minutes, turning occasionally, to cook evenly.  You’ll see the asparagus starting to blister and char.   Transfer to a serving dish.

Ingredients
