This cajun-style charred salmon with cowboy potatoes recipe was first featured in the May 2019 edition of delicious magazine and I saw it posted on their Instagram page in mid-May this year. It just looked delicious, so I checked out the recipe and decided, yes, this was definitely a recipe I wanted to try.
The salmon ends up lovely and charred on the outside with delicious spice from the Cajun seasoning and soft in the middle. The cowboy potatoes and flavoured yogurt compliment the salmon really well...yum!
